JD Dunne Tart

Crust Ingredients (makes seven individual tart crusts)
      One package puff-pastry
      One large egg
      1/4 teaspoon vanilla (or almond) extract
      Powdered sugar
      Cinnamon
      Butter
      All-purpose flour

Beat together vanilla extract and one large egg.  Roll out the pastry into a rectangle and brush with beaten egg. Sprinkle on some cinnamon and powdered sugar. Tightly roll the pastry, along the longest side, into a sausage roll and slice into 7 discs, approximately 1-inch thick. With the palm of your hand press down into each disc, then roll out each disk into a circle.

Grease the bottom and sides of 7 oven-proof glasses with butter, then dip each into a bag of flour so that the flour sticks to the butter — shake off any excess flour. Place the center of one of the pastry circles on top of one of the floured oven-proof glass; gently press the sides of the pastry onto the side of the glass (it should look a bit pleated).  Repeat for the remaining six pastry circles and glasses.  Place the glasses (rim side down) on a tray in a preheated 350°F oven. Once golden brown (approximately 5 to 8 minutes), remove from oven; immediately press bottom of each warm tart crust to flatten.  When crusts are cool, remove from glasses.

Virginal Cherry Filling Ingredients
      One (0.25 ounce) package unflavored gelatin
      2 tablespoons cold water
      4 cups pitted cherries
      1/2 cup granulate sugar
      1/2 cup golden brown sugar
      2 tablespoons cornstarch
      4 tablespoons lemon juice

In a small bowl, soften gelatin in cold water. Set aside.

In a medium saucepan, mash half of the cherries (2 cups) with the sugars. Stir in cornstarch and lemon juice. Cook over medium heat, stirring until thick and transparent. Remove from heat. Add softened gelatin and water; stir briskly.

Slice remaining cherries and distribute evenly into the prepared tart crusts.  Pour gelatin mixture over cherries. Chill at least 4 hours before serving.



Yield: 7 magnficent servings.
